Well...Let's just say finding the right sized pork loin was probably my biggest hurdle. I either found them weighting only a pound or 5-10 pounds. I finally settled for 1.4 lb. (I didn't want to invest too much into a test run loin). When I cut into the loin, I did pound it out a bit to allow for more rolling room (It still turned out to be more of a log than a roll). I also didn't have any hearty white sandwich bread...but we did have plain biscuits for breakfast that morning so, I threw a couple of those in the sausage mixture. Otherwise, I followed the recipe.
I have to say, to the working moms, this maybe more of a weekend dish. It wasn't difficult, but the process was long enough that it might make it difficult to get dinner out at a decent hour. It was a huge hit at my house....there was nothing leftover.
