First of all, let me say how sorry I am for the delay from Thanksgiving until now. The holidays are always nuts and my husband was out of the country, which means I can take a break in the kitchen, and exercise my right to have as many chicken nugget and mac and cheese, pizza, and "help yourself" nights as I want. And so, I did. Second of all, I am really making up for lost time with this one. Wow.
I had been wanting to "Braise" something since I started this adventure. I had never done a braised recipe....or so I thought. After a little research, I learned that braise is a fancy term for searing the meat and then cooking it in a liquid. Now that sounds less fancy, but very familiar to me.

I am going to start with, this is probably one of the best meals I have ever made. And, also the most time consuming. It was over two hours of prep work to just get the short ribs in the crock pot. It wasn't a 'cheap' dinner, either. I guess because I live in the Northeast it was slim pickings on the beef short ribs. I certainly couldn't find any English style short ribs. But, this is where my criticism of this dish ends. We were all in agreeance that this was a definite keeper and a "Special" dinner request (ie Birthdays or holidays) I just can't get over the fact that something I made tasted that good. If you are aiming to impress....this is your dish.
