Pork. The other white meat is apparently something else my kids choose not to eat. Even with ketchup. I wanted to make this because it has a sauce and I am on a mission to master sauces...still. Last minute I decided to try this recipe. I had everything in my pantry/fridge, except for the pork chops. small detail people....I have a freezer full of tricks! I didn't feel like going to the store, even though the picture of these chops looked great! I improvised, I took out a pork loin, thawed that baby out and bam....Pork Au Poivre! Kaitlin walked by when I was cooking it and declared, "oh no...mom's trying something new again tonight, she has food out AND the camera"

This was a great meal...it was super fast and easy to make....next time I want to use chops though. It was also reasonably priced as well.....less than $15 to feed 3 people. I know, some of you are thinking, she has 5 people in her family...hmmmm??? I no longer include Kaitlin and Riley. If there is no pasta, cheese or bread why bother people?!?! Morgan even ate this meal....but at this point I am not really sure if she's eating out of fear for her safety. But the fact she went back for a little more is a good sign! I barely had any leftovers...Robbert even liked it. Next time I will add a little more Sherry. Everything tastes better with a little more Sherry.

I used ground peppercorns because the coarse peppercorns are a bit too strong for my liking. Other than that, I stuck to the recipe! Another reason I think more Sherry is needed...my sauce was a bit thicker thank the picture....maybe some extra Sherry will help! While we polished this meal off, Kaitlin and Riley enjoyed Fruit Loops. I think they are even getting tired of pasta.
