It's times like these that I wish I ate fish. My husband is a lover of all things seafood, and I am on that other end of the spectrum. I felt the need to cater to his (and my son, Ryan's) seafood whims (and bought a frozen pizza for me, Taylor, and Mark Henry). So, I dove into my cooking magazines and came across a recipe in Cooking Light. Only a 4 ingredient fish dinner.....yes. This is exactly what I needed. I did replace the canola mayo with just regular mayo (I didn't want to buy a whole container of a mayo I wasn't sure about for a fish dish, of all things....). Other than that....no deviations.
So, I made this recipe and I could not believe how easy and fast it was!!!!! 15 minutes, including cooking time, prep, and pictures. And the fish eaters of the house were sooooo happy and complimentary! I got such a positive feedback, I called the people I call when I find a fast and easy meal that is fantastic. I gave it to my sister-in-law and she made it the next day....also a hit in her home. Super good, super easy.....what's not to love? I mean, if you eat seafood....I can honestly live without it. However, it is my new go-to for the fishy folks in my house.
