My partner in blog crime, sent me an early birthday present. I got a subscription to a new cooking magazine! I didn't let it sit around for long before I found a recipe I had to try out. I chose to try the Taco Pie. It looked fantastic AND I love Mexican food, so how could I lose? I, however, am not so great at making crusts...so, even though my crust didn't really look crust-like, it tasted fantastic! I think I didn't cook the masa harina long enough. It didn't look as stiff as the crust the magazine pictured. I like adobo, but I don't love it. So, I wish I had put a little less in the beef mixture. A little of that smokey flavor goes a really long way. I had bought avocados a few days ago, so I assumed they were ripe enough to use....I assumed wrong. So, I had to leave that part off. But, all in all....everyone ate it and really liked it. Taylor and Mark went back for seconds. It was a good break from taco night. I'm going to try this again and I'll let you know if the crust re-do looks and acts more like a crust.
**Update: I gave this another whirl to make the crust better...I just can't seem to get the Masa to act right. I think I may have to give up on it. Maybe I should just stick to Taco Night. :) **
