Scalloped Corn. Uhhhh....yes, please!

I am forever looking for some side dish that is easy and different.  I made the Moravian Chicken Pie when my parents came to visit (as a side note: The pie is so much easier to fix when not taking pictures and using ready made dough) and needed something to go with it.  I flipped through my magazines and came across Scalloped Corn.  Well, that was a no-brainer.  The crust on it was fantastic...come on, Ritz crackers, what's not to love?  I couldn't find fresh corn in the grocery store, so I used frozen.  I think it would have been better with fresh.  All in all, I'll definitely be doing this again in the summer when the corn is in season.  This side dish would go nicely with something on the grill. Yum!
