I was skeptical at best making the Easy Mediterranean Chicken and Rice from Cook's Country. It looked good, but I wasn't one hundred percent sold. To be honest, I was a little burned out on making new stuff and taking pictures of every little step. Believe me when I say, it doubles the cooking time. On top of that, nothing was catching my attention or knocking my socks off in the magazines. But, I settled on this Easy Chicken dish. Hoping that it really would be easy and worth my time and effort.

I know my husband isn't a fan of the black olive. I, personally, love them. Wait. Let me rephrase that, I love the black olives in a can, the ones that as a child I would stick on my fingers. I tasted the olives they had listed in the ingredients. I was not a fan. So, I tossed out the olives I had chopped up, but went ahead and used the olive brine. I was pleasantly surprised at how beautiful the chicken and rice turned out. It looked fantastic. Better than the picture in the magazine. The real test was going to be if it tasted as good as it looked. Cook's Country came through for me again! It was actually easy, beautiful to look at, and tasted fan-freaking-tastic! Whew!!
