I picked Orange-Glazed Pork Medallions simply based on the fact I had everything on hand, with the exception of orange marmalade, and that was easy enough to remedy.... The kids really liked this dish and I loved the fact that it was soooooo easy! I wasn't 100% sold on that super orange with hot sauce taste. I think I would maybe use less or skip the hot sauce all together next time. If it needed a little heat, maybe a couple of red pepper flakes or a dash of cayenne.... Anyway, all in all, it received 3 thumbs up and my ambivalence. I think I'll try it my way next time and see what the crew says....
