It Was A Cold And Rainy Night...

Don't all good stories start out that way...?  It really was a cold and rainy night and I needed something fast and easy because I have my sister and nephew coming this weekend (don't want to mess the kitchen up before they get here).  What's better on a cold night than soup and a sandwich?  I had made my mom's chicken tortilla soup the night before (it was also cold and rainy) and had some left over.  So, to change up the dinner a little, I needed something new to go with it.  I had flipped through the new Cook's Country magazine and came across the chicken caesar wrap and saw it used a rotisserie chicken....hello, fast and easy and something new.

This was sooooo easy and now I have a homemade Caesar dressing recipe that doesn't involve anchovies.   I think this would also be fantastic on a hot day with a fruit salad.  I'll be making it again....and again...well, you get the picture.  Hot day, cold day....Wednesday...any day you feel lazy and want a yummy chicken wrap that only took 15 minutes...this is your recipe!
