Everybody Needs A Vacation

As you may, or may not, have noticed, I took a small break from the kitchen and blog.  We were dealing with the hustle and bustle of prom, graduation, family arriving and departing, and just life in general.  I was in no condition to write, much less subject my extended family to my kitchen, that I lovingly refer to as my laboratory.  However, I am back, and bearing gifts. :)
Prepped Grilled Cheese

Grilled Cheese Sandwiches for a crowd is so easy and saves tons of time at a griddle.  I made it for my family of 5 and everyone ate it, (who doesn't enjoy a grilled cheese?) which is always a positive.  I didn't know what to buy as far as hearty white bread that the recipe called for, but I did find Texas Toast at the grocery store (who knew you could find that in Massachusetts?!)...it really doesn't get much heartier than that.  I did have to cook it a little longer, but it worked out well.  I did 3 regular grilled cheeses and 2 of the Pesto-Capicola grilled cheeses.  I ate the Pesto version and it was fantastic, albeit a little rich.  One sandwich was more than enough!

In all my planned chaos while my extended family was in town, I honestly wish I had thought to look at the dishes I have already prepared and just haven't added to the blog.  Nothing says "Impromptu Lunch" like Grilled Cheese Sandwiches for a crowd.  This could have been a lifesaver in a couple of instances when I was knee deep in my daughter's last prom, graduation, and my wine glass.  Oh well, that's when take out menus come in handy, right?  Regardless, no one went hungry and my lack of planning may be your go-to crowd pleaser!
