I had planned a poached fish recipe for this particular night and I cannot tell you my relief when the fish hadn't thawed in the fridge. I just didn't have the strength to do some elaborate fish dinner after painting all day. Mostly because that would mean I would have to make myself something else (not a fan of seafood), and preparing two proteins was out of the question. Of course, then there was the dilemma of what to make now.
Fortunately, I had the new Cook's Country out and I flipped through the 30 minute supper section...Nothing that wouldn't require a major trip to the grocery store. That's when I saw a section I had never seen before. It was a reader recipe submission page. All I needed from the store was buttermilk for one of those recipes. Sold!
To say my family wasn't totally jazzed about the prospect of Homemade Corn Dogs, is putting it lightly. They have been a little spoiled with my "magazine recipes"....Corn Dogs didn't seem to fit the picture of a magazine recipe in their heads. I heard a lot of grumbling and whispering....kids casually walking through whistling a tune with eyes zeroed in on the package of hot dogs. When I finally had enough, I just, politely and sweetly (with eyes narrowed and teeth clenched) said, "Look. I'm tired and these rooms aren't painting themselves...Stop Judging Me and My Magazine Dinner!"
I think my point was made. I started to worry that the judgement wouldn't stop there. What if Corn Dogs weren't good enough for the blog? What would all 4 of you think? I poured a wine and thought about it (when in doubt, uncork). How could I class this dinner up a bit? The answer became glaring clear as I finished my glass of wine. Wine! The answer to all my problems! As many times as I can, I'll include my wine glass in the picture... The epitome of classy.
The Corn Dogs were good. I ended up with the one that looked like it had a growth on it, but it was tasty. I think I would add a little more sugar to the batter. I liked the touch of cayenne and there's nothing like a little spicy with a little sweet. The wine was a Zinfandel and was fantastic also. If you are looking for a homemade corn dog recipe, look no further!
