Well, let's see...I like potato chips. And I like cookies. But, potato chip cookies....ummmm, let's not get carried away here. I'm all for that whole salty-sweet combination, think chocolate covered pretzels or kettle corn...but why would you ever stick potato chips in a cookie?
I completely skipped over this recipe in the June/July Cook's Country when it came in. Just seemed wrong. And then the desperation of, I need a magazine recipe, sunk in last week... I began to think that maybe these cookies would be a good idea. Maybe, not weird at all to put perfectly good potato chips in cookie dough. Maybe, I had all the ingredients...Oh, what do you know, I did have all the ingredients. I mean, they did put these cookies on the cover that month...

I had all the ingredients out on the counter to take a picture and who would casually walk in? Investigator Ryan. I am sure, poor gullible Ryan has been talked into making a fly by to see what I am cooking now. I hope he is at the very least making a little cash for being the scape goat. I doubt it, but one can hope. Ryan casually asks, "What-are-you-makin'?" (all one word, in an innocuous, sing-song voice...he's not what one would call slick). I answer, "Cookies. Can you move out of the shot?" "Oh, sorry. Sure. Sure. Oh wait, Mom! I think I left part of my lunch on the bar...you almost took a picture of it.", Ryan says feeling proud for saving the day, removing the chips from the picture (Well, now I know who opened the bag of chips). I didn't want the kids to know I was putting potato chips into the cookies (I wasn't in the mood for them to hover and complain). So, I mumbled a 'thank you very much, now leave me alone'... I couldn't help but to sing that song from Sesame Street for the remainder of the cooking (and now it's stuck in my head again as I am typing this) One Of These Things Is Not Like The Other.... I think I just dated myself again....
It was as clear to Ryan, as it was to me...who in their right mind would put potato chips in cookies. I had the chocolate and coarse salt to do that version of the cookie, (It was a side recipe for this cookie) but decided not to melt the $4 chocolate for potato chip cookies. I think Mammy in Gone with the Wind said it best, I was going to dress these cookies up like they were race horses, but they were probably just mules in horse harnesses and weren't going to fool anyone. So, no need to waste the $4 chocolate on them.
The cookies weren't the easiest to make...but not overly complicated. I took my pictures and called the kids. I waited to try them until the kids did (like any devious mother would) just to see if they were edible magazine cover worthy. They each grabbed two and left. I heard nothing...no mumbling, no huddling around them whispering, no nothing. Ryan came in and grabbed a couple more and with mouth full said, "Good." Sometimes he's a man of few words...not often, but sometimes. Hmph. I tried one...they were good. Pretty good. They tasted a little like Pecan Sandies. I was surprised. I really liked them. Whew! Another nail biter recipe turned success!
