Grocery Store Math...

Cherry-Almond Granola Bars
I just want to go down for the record as saying, I'm not one of those 'organic or bust' moms.  I'm not a health food fanatic (clearly...just look at my fried pickle and corn dog magazine recipes), but I'm not opposed to a healthy option either.  Here's the thing with eating healthy...it ain't cheap.  It certainly isn't always the easy way, either.  I guess my first clue that this wasn't going to be a cost friendly recipe was that I got it out of Bon Appetit magazine.

The Ingredients
But then I started to do some grocery store math.  I did my best to keep the cost down (Trader Joe's is a fantastic place to go for a lot of the ingredients).  I work really hard to feed this family of five, breakfast, dinner and some lunches for around a $100 a week.  And that includes a hot, mostly magazine dinners.  Not easy my friends.  So, I saw this Cherry Almond Granola Bar recipe and thought that it might be fun to try.  Now mind you, you can get a box of 12 granola bars for $2.50 at the store...  I spent between $10-$12 on the ingredients for this at the grocery store.  I know, I know...but bear with me, It made 24 granola bars and there were enough ingredients left over to make another batch.  So it equals out to be around the same price.  AND it's got no artificial anything in it.

Also there was a level of work involved to factor in...but seeing as we just got finished with a hurricane and there was a Nor'easter blowing outside....what the heck else am I going to do?  So, I chalk it up to more entertainment than work.

clean this up.

I was shocked at how excited my 4 year old was about these granola bars.  Unfortunately, there are lots of letting it cool before you can continue to next steps...  He's not the most patient of the crew.  He was also bummed when he realized these weren't cookies.  But, I have got to say that they were so dang yummy.  I loved them!  So did my daughter.  After all that leftover Halloween candy, this was a great way to get that sweet something I am now craving and not feel guilty.

So, if you have the time and counter space (see picture above)...I highly recommend giving them a whirl.

Coconut oil, brown sugar, and salt
